Outlook Rules Wizard
In Outlook, the Tools/Organize folder item brings you to "rules wizard" that allows you to select content based criteria (in this case an [S] in the subject) to apply against a desired action.

See the attached Screen shot. Create a new folder called Spam and have anything with an [S] in the subject line sent to this folder.

Once setup and active, Outlook should be able to find all the [S]'s in the subject line of incoming mail and send them to spam folder automatically. This makes it so you do not have to see all the SPAM picked up by the mailserver yet have the ability to check your SPAM folder from time to time.
